Gluten Free Banana Pancakes for Kids

I have decided to start posting recipes to help those who are parents of children with celiac disease. I am not the type of mom who uses tons of expensive flour and xanthum gum. I do occasionally put rice flour or cornstarch in dishes, but other than that I try to avoid flour completely. So as I come across recipes that are successful and yummy I will try to post them here so you will have a collection of dishes to make out of "regular" food. The recipe I have for today is banana pancakes. It seems a little crazy that these pancakes can be made without flour, but it's true! I've done it! They smell amazing while they are cooking too! Give it a try!

This is how mine turned out!


1 1/2 large ripe bananas

2 eggs

1/2 tsp. vanilla extract

1/4 tsp. ground cinnamon

1/8 tsp. baking powder

INSTRUCTIONS: Crack the eggs ina bowl and whisk them. In another bowl, lightly mash the bananas with a potato masher or fork. Add the egg, baking powder, vanilla, and cinnamon to the bananas. Pour about 2 Tbls of the batter at a time onto a skillet placed over a medium-low heat and cook until the bottom appears set (1-2 min). Flip and cook other side. Serve immediately, topped with fresh fruit or maple syrup.
