I have decided to start posting recipes to help those who are parents of children with celiac disease. I am not the type of mom who uses tons of expensive flour and xanthum gum. I do occasionally put rice flour or cornstarch in dishes, but other than that I try to avoid flour completely. So as I come across recipes that are successful and yummy I will try to post them here so you will have a collection of dishes to make out of "regular" food. Last April my daughter was diagnosed with Type 1 Diabetes and Celiac Disease. She spent the entire week of her 3rd birthday in the hospital! I felt awful! The doctors reassured me that there was nothing I could have done to prevent this. I believed them. After all, why should I not? They are the doctors and specializing in pediatric diabetes to boot! You know those days when you are up all night with a tired kid who screams hysterically when you put him to bed. Usually there is a good reason for this like an illness or teething. Sometimes they are scared because they had a bad dream, or best of all they just want to play all night and don't act tired at all.
